Roast pumpkin and chickpea salad with sundried tomato dressing Serves 4 Ingredients for salad ½ x organic pumpkin, peeled and cut into large cubes (tossed in olive oil) 1 x cup cooked organic chickpeas 2 x tbsps chopped fresh coriander
Ingredients for dressing ½ x cup sundried tomatoes ¼ x cup red grape vinegar 3 x garlic cloves 1 x tbsp balsamic vinegar ½ x cup organic extra virgin olive oil 1 x tsp honey Salt and pepper to taste
Method • Toss the pumpkin in olive oil and then roast for 25 to 30 minutes on medium heat until soft and golden. Then leave aside to cool.
